happy nearly april.
happy spring.
happy all things.
did i ever share with you the best way to caramelize mushrooms?
with butter & oil in the pan.
place mushrooms cut side down with out jumbling them about.
do not stir or flip until you can hardly bear it and until little droplets of water escape on the top of the mushroom.
flip each mushroom one at a time.
add more butter if you want.
after a few moments you may begin stirring.
i promise you these will be the tastiest mushrooms for your omelet or burger or to chop up for your ragu.
try it.
