raising foodies week 3

Well, it is week 3 of the raising foodies online cooking club, if you want to see what others are cooking up for their families in an attempt to raise foodies, click on over to Joslyn's "Raising Foodies" blog and check her side posts for the list of those playing along.

Week 3 was a success around here, and we even had a 8 year old friend join us, so the meal was kid approved x3 and of course parent approved.
I'll make this again...I always say that but I really enjoy trying new recipes.

Pomegranate-glazed chicken breasts served with pistachio couscous and steamed garden fresh beans. The chicken recipe was adapted from "Everyday Food" and the a couscous was hybrid between the Trader Joe's box and a different "Everyday Food" recipe.
adapted recipes as follows:

Pomegranate-glazed chicken recipe can be found here. I used boneless, skinless organic chicken breasts instead of what the recipe calls for and instead of orange juice I used a orange/peach/mango juice I had on hand. I also used a twig of fresh rosemary and used a little less vinegar.

For the couscous:
-melt a blop of butter in a pot and sauté a green onion (I used the last one from my garden) until golden-ish...you could use a shallot instead.
- add a mashed clove of garlic and saute
- add 1 1/2 cup of Israeli couscous, 1 bay leaf and a dash of cinnamon (or a cinnamon stick...I only had cinnamon on hand), stir for a about 1 minute
-add 1 3/4 of chicken broth and a pinch of salt to mixture, bring to a boil, reduce heat to low, cover and simmer until liquid is absorbed.
-Stir and add a handful of pistachio pieces and a handful of raisins, and parsley to couscous (optional of course...you could use pine nuts, almonds, dried cranberries and so on
-serve and marvel at your kids asking for seconds.

I may be the last to post about the new Lonny online magazine, from the former editor's of Domino...but really it is wonderful, especially when viewed full screen.
I have to admit there is something to be said about paper in hand but for the sake of the environment it was a pleasure to read the first issue of this swell mag online.

just a little "beckoning of lovely" update...

A big thank you to Emily of Wide Open Spaces for the kreative blogger award/tag this week and in the spirit of playing along I will post 7 things you don't necessarily know about me.

1. Breakfast is my favorite meal of the day and I love eating it anytime of the day...pancakes for dinner, cereal for a snack, leftover oatmeal for lunch...I love going out to eat breakfast too, especially if hollandaise sauce is involved.

2. I think I'd like to try roller derby, if I could skate and have a bit more courage. (spurred on by Whip It)

3. I have a slight reality tv addiction...amazing race (sun), biggest loser (tues), top chef (wed) , project runway(thurs). woah nellie!

4. I love the movie "Ironman"...normally superhero movies don't cut it, but this one rocks. Go watch it.

5. I could wear a cardigan everyday and often do; when i was a child I use to call cardigans, cardinals, oh I also called juniper , jupiter and clans, clangs. silly girl.

6. I never wear animal print...ever...I am opposed, but I do have an zebra print purse I like and use for festive occasions.

7.I try not to let my family eat sugary, hfcs, food colored, artificially flavored, chemical laden foods but I have a weakness for "french vanilla cafe" instant coffee drink and often it can be found in my cupboard. terrible.

plus 2 bonus hits:
-I never forward chain letters, emails or the such...nothing terrible has happened!
-I can not carry a tune, sing in key, or recall song lyrics, song titles or artists...don't ask me what the name of that song is...I don't know.
....
I always feel like I am leaving someone out when I pick...like in dodgeball in school as a kid...so if you want to play along, link back to me and leave a comment so I know you are playing along.

another way you know...

you have a deaf child...
when the sibling of your deaf child explains the inner workings of Spiderman to you and uses the following statement...
"...when Spiderman signs i-love-you then the web comes out of his wrist..."
Referring to sign language and superheroes in one sentence.
Although, he just said," I'm not sure Spiderman knows sign language."
One of many moments that deafness shines through!
